An Irish/Mexican fusion in a soft taco shell. The kind of lunch that would make you want to smack a piñata down with a Hurley stick whilst dancing an Irish jig 💪 Seriously healthy, seriously tasty and seriously garlicky. Have a packet of extra strong breathmints on hand. The bang is real.

3 tbsp of Nutritional Yeast
1 tsp Chilli Powder
1 tsp sea salt
1/2 tsp cumin
3/4 tsp turmeric
1/4 tsp garlic powder
4 cloves of minced garlic
2 tbsp olive oil
1 block of drained Tofu
Coriander for garnish
How to cook Pablo McDermott's Scrambled Tofu Tacos
Add all spices to a bowl and mix well
Drain and dry the Tofu well
Heat olive oil to a medium heat and add minced garlic
Cook for approx. 3 mins before garlic browns
Crumble the Tofu in to the pan, leaving medium sized chunks
Add spice mix to the Tofu
Cook for 8-10 mins
Serve on heated soft Taco with coriander, salsa, vegan sour cream, vegan cheese etc..
Have a mint for dessert 😁
