'Sweet Like Chocolate' Buckwheat Waffles

These 'healthy-ish' Buckwheat Waffles are for the chocolate lovers only. That should mean 'for everyone' because in my world, everybody has to love chocolate! Vegan, Gluten-free and are a low GI version of the American Waffle ๐Ÿ‘ Absolutely savage with a tasty peanut nut butter sauce. Shanks & Bigfoot would be so proud๐Ÿ”ฅ

For the Waffles
  • 180g buckwheat flour (I got mine in Holland and Barrett)
  • 50g of cocoa powder
  • 30g of Coconut Sugar (I got this in Aldi)
  • 1 tbsp of baking powder
  • 1/2 tsp of salt
  • 400ml of unsweetened almond milk
  • 60ml of cup light coloured olive oil
  • 1 teaspoon vanilla extract
For the Peanut Butter Sauce
  • 4 tbsp of peanut butter (I used Meridian Smooth)
  • 4 tbsp maple syrup
  • 2 tbsp of water (add more to reach desired consistency)


How to cook 'Sweet Like Chocolate' Buckwheat Waffles

  1. Start off by mixing up the peanut butter sauce. Combine the above ingredients in a bowl. Use as much water as you need to reach your desired consistency
  2. Get that waffle maker sizzlin' ๐Ÿ”ฅ
  3. In a separate bowl, combine the flour, baking powder, sugar and salt. Add the Almond Milk, Olive Oil and Vanilla Essence until combined. 
  4. Pour the mixture in to the waffle maker and follow manufacturers instructions (usually a bout 10 minutes)
  5. Serve with the peanut butter sauce. Throw some strawberries on top (or any other fruit) and Bob's your uncle and Sally's...my daughter ๐Ÿ‘
