Pear & Vanilla 'Ooooh Baby' Muffins 🌱

I challenge you to eat only one of these Baby Muffins. Not a hope! 😂 These little beauts are tasty. Real tasty. I had 5 in one sitting! Then again, I'm a savage. The puréed baked pear gives these the extra edge 💪 Ooooh Baby 🔥

ingredients:

  • 95g  all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • Small pinch of salt
  • 1 Flax Egg (1 tbsp of ground flaxseed mixed with 3 tbsp of water)
  • 2 tsp vanilla extract, plus a dash for baking pears
  • 1/2 tbsp lemon zest
  • 50g packed brown sugar 
  • 60ml of melted vegan butter (I use Naturli Vegan block)
  • 1 pear roughly chopped into small pieces 
  • 125ml of  pear purée ( 2  medium sized pears  whizzed in blender)

instructions:

How to cook Pear & Vanilla 'Ooooh Baby' Muffins 🌱

  1. Preheat the oven to 200C
  2. Place chopped pears and a dash of vanilla extract into a baking tray and bake for 20 mins until golden
  3. Remove from oven and throw into a blender (I use a Nutribullet).  Blend  until puréed
  4. Grease muffin pan with some vegan butter
  5. In a bowl, sift  flour, baking powder, baking soda, and salt and mix well
  6. In another bowl, whisk the flax eggs, vanilla extract, lemon zest, and brown sugar until combined well. Add the melted butter, a little at a time, whisking until mixture is creamy. Add pear puree.
  7. Fold in the flour mixture until just combined. Don't overmix to keep these babies fluffy
  8. Add chopped pear and fold in.
  9. Divide batter among mini muffin cups and bake the muffins until golden, about 20 minutes.
  10. Remove from the oven, cool on rack for 5 minutes
  11. Get shtuck in. You're not going to be able to have only one! 🤣
